Easy Chicken a la Mikey

Do you remember the commercials for cereal where all the kids sat around watching to see if Mikey liked it?

I have three kids named Mikey!

Invariably one likes it and the other two don't, or two like it and the other one doesn't, or all three don't like it. But very seldom do they all like it!

I'm not quite sure how I accomplished it, but it makes many meal times around here interesting.

Anyway, my daughter who is just recovering from an addiction to breaded chicken strips informed me that my MIL makes great chicken with salsa. So I tried it tonight, it was soooo easy (I used ready made salsa although homemade is amazing, especially if you have your own garden fresh tomatoes)

All I did was take some left over chicken from a roast chicken, (I am always looking for easy chicken recipes because we raise our own meat chickens so have lots - but you can use frozen boneless chicken breasts) put it in a pan and dumped some salsa on it, mixing it in a bit and covering it with foil.

I was also doing some homemade potatoe wedges so I put them in and put the chicken in a little bit after at about 400* (a little high for the chicken but since I was doing the potatoes I had to risk it, I love living the life of high adventure!)

My daughter also informs me that my MIL makes chicken with zesty Italian salad dressing, basically the same way. We are going to try that next time. It might be good with rice (which Mikey #1 doesn't like, Mikey #2 does kinda sorta depending on which side of the bed she woke up on, but Mikey #3 does)

I do find that one very effective way to make meal time go smoother is to let them help in the planning and cooking when possible (my daughter who suggested the salsa of course thought it was the best!) My youngest daughter is always whipping up concoctions which she eats although most times nobody else does :0)

It's funny, I've always found that I enjoy other people's cooking better, come to think of it, so does every body else!
